Halloween just calls for pumpkin. Today, I made pumpkin cupcakes with a cream cheese frosting for our neighbors’ annual Halloween get-together. If I do say so myself, they were pretty scrumptious. I’ve made a lot of pumpkin breads and muffins, but I think these take the cake in the ol’ pumpkin department. They just have that light, airy taste only a “mini-cake” can give. I won’t go into details, but I had more than one of these guys today. Hittin’ the running trail tomorrow…
Baking season has begun…
31 OctFall brings out the baking in me…hence, more running. I love to eat sweets, therefore, I have to run. I don’t like to diet. I like to eat and enjoy food. A good life to me is a kitchen that smells like goodies in the oven. I have been doing a lot of baking recently for birthday parties and such. I am excited about the business. It has been really fun getting creative. And, I love the sampling! And, so does my husband.
But today, I made some mint filled brownie cupcakes, just ’cause. If you like mint, these will hit the spot. I took them to a Halloween party. I hope others enjoyed them as much I did. Happy baking!
Happy 1 Year, babies!
18 SepToday I’m posting some photos from a 1st birthday celebration of a girl and boy. Hence, the pink and blue! My neighbor friend gave me free reign on the cupcakes, so I decided to go with fondant cutouts of hearts for the girl and stars for the boy, with their initials stamped on them. I created jumbo cupcakes for the babies’ “smash” cakes with fondant cutouts of number 1 in the frosting, as well as more hearts and stars. I made both chocolate and buttermilk vanilla cupcakes with buttercream frosting. I hope these little ones enjoy eating these as much as I enjoyed making them for their special day! Happy birthday!
Happy Anniversary, Clouds 365!!

These cupcakes were made for a anniversary celebration honoring a neighbor friend, Kelly Delay, who took on a year long photography experiment of shooting clouds every day. His year long journey began on July 1, 2009. He decided at the one year mark to continue on and shoot clouds for another year. We are all grateful for that…the photographs are amazing! The cupcakes were buttermilk vanilla cupcakes with vanilla buttercream frosting in white and blue. Each cupcake was unique, just as clouds are! To present the cupcakes, I covered each cake board with a collage of Kelly’s photos from the first year. (I won’t post any of my photos, because they don’t compare to the ones posted here!)

C’mon fall…mums, pecan pies and all.
26 AugSo, first off, I will say thanks to my friend and neighbor, Stephanie, who gave me the inspiration for these cupcakes/muffins. I will definitely jazz them up more next time. I will add frosting and make ’em pretty. But sometimes there is no time for letting butter soften at the last minute….especially with kids running around who need baths and bed. Once she mentioned them, I was geared up to try them and even had to borrow pecans…again, last minute. Once I’ve got it on the brain, I can’t stop until they are in the oven. Trouble.
Here they are, Pecan Pie Cupcakes. These are not for a dieter. That is for sure. I even thought, “This is a lot of butter.” I may cut back on it next time. But, the butter gives it the ooey, gooey texture like a pecan pie gives us. Since I skipped the icing, I drizzled some melted chocolate over the top, which reminds me of one of my favorite pies, a chocolate pecan pie.
Since Stephanie suggested that I try these, she was my taste tester. I think she approved.
Peanut Butter Cup Cookies…’nuff said
20 AugOn the dessert menu tonight….I made some peanut butter cup cookies. They are peanut butter cookies that have that deliciously buttery texture with chocolate chips and REAL peanut butter cups…you know, the ones with creamy peanut butter inside. Scrumptious. And, of course, more of the cold white stuff…in a classic Snoopy and Woodstock glass. Must.Run.Tomorrow.
Test kitchen…success.
11 AugSo I tested some banana cupcakes tonight…with molasses frosting. I think these might be added to the menu. I think I could’ve eaten all the frosting in one sitting. I’m already envisioning everything this delicious frosting could go on. Bring on the fall! It will be tasty with all that my favorite season has to offer. YUM!
Oh yeah, and no testing is complete without the cold white stuff.
