I made these for a welcome home party for some friends of a neighbor who are coming here from Italy and Germany. They wanted a Texas theme for the cupcakes. What better way to welcome them to the South than with red velvet cupcakes with cream cheese frosting. I used blue fondant for the Texas-themed cutouts: a “baby” Texas, a cowboy hat and a star, of course!
